Less than what?!

So folks we are less than 3 months away from the big day!  I cannot believe how quickly time flies!  I promised some talk about menu and room design for you all today so here goes!

Up in Vail we were able to go up to the actual venue and meet the chef and coordinator who will  be there the day of our wedding.  The chef was an amazingly nice and accommodating guy who made us some delicious food.  The only bad thing was we had eaten lunch with our wedding planner Katie right before…he brought us SO MUCH food!!!  I felt really bad only taking a couple bites of each, but he was so nice about it and knew that there was no way we would be able to eat all of it!  I think we have made the final decisions about what you all will be eating…but to make to final FINAL choices we have to wait until the ski season is officially over and they make the summer menu decisions….which I think is today!

Room design was something I was super terrified of!  I have so many ideas, but have no idea on how to put them together and make them work.  Katie from Impromptu Company met us up in Vail and has some really great ideas!  The great part is, they looked at my Pinterest page, and are going to take it from there!  I will provide the decorations I already have and they will just get the rest.  I can’t even tell you how much stress this takes off my shoulders!

This week I am officially starting the “wedding” exercise and food plan.  I will dive more into that soon 🙂

This is late, but it is still happening on Wedding Wednesday!!

This weekend we took a trip up to Vail with the wonderful Amy and Andrew.  Andrew’s mom and stepfather graciously offered us a place to stay so we just couldn’t refuse!  They live in a beautiful, no magnificent, home in West Vail and we always have such a relaxing time when we stay with them.  Our first appointment on Saturday was with Vintage Magnolia our florist.  Before we even went up there they had sent us a proposal.  This was an amazing thing to start with because we were able to look through everything before hand and come into our appointment with ideas and suggestions. We hammered out the final details and sent in our deposit!!  The flowers are going to be SO beautiful, I will post pictures next week 🙂

We went to lunch, then had our next appointment with our dessert supplier. I say dessert supplier because, GASP, we are not having a wedding cake.  We decided since so many things thus far were going to be different, why not go that route with our desserts!  We met with Felicia from Cornerstone Chocolates and Confections.  She was so amazing! She asked questions that I would never have thought to ask about a dessert table.  She has our colors, and is going to match one of our desserts with it!  We tasted a bunch of desserts and finally decided on a selection of 4 delicious options for our guests!  You will have to wait until next week to find out more about those 😉  Here is a sneak peek of one of our options to hold you over until next week!


I have so much more to tell you all about where we are in the planning, but I need to sleep…I have been getting much more consistent with gym time and will be there bright and early tomorrow morning!  I will also be telling you about the beginning of my wedding workout routines!!  So much next week, until then!

Sunday Sunday Sunday!

Hey all Sunday has arrived and I have not just one but 2 new recipes for you to try!  Pumpkin has filled my day again and have a delicious meatball recipe and a lovely pumpkin dessert that is so simple it hurts 🙂

First I found this recipe for pumpkin meatballs on people.com!  If you don’t know me, I read and love people.com.  I read it every single day.  It is my little break from the crazy at school and I am always up on my celebrity gossip news.  Lucky day for me though, I found a recipe to try also, see it is not just reading trash 🙂

Ingredients for Meatballs:

  1. 20o z package extra lean ground turkey breast
  2. ⅓ cup pumpkin puree/canned pumpkin (not pumpkin pie filling)
  3. ⅓ cup oats, lightly pulsed in processor
  4. 2 tablespoons egg whites
  5. 1 teaspoon cinnamon
  6. ¼ teaspoon nutmeg
  7. ½ teaspoon salt
  8. dash of pepper (to taste)

Ingredients for Sauce:

  1. ½ cup pumpkin puree/canned pumpkin (not pumpkin pie filling)
  2. ½ cup coconut milk
  3. ¼ teaspoon cinnamon
  4. ¼ teaspoon pumpkin pie spice
  5. dash of nutmeg
  6. ¼ teaspoon salt
  7. 1 teaspoon brown sugar

How to:

  1. Preheat oven to 375F.
  2. Combine all meatball ingredients.
  3. Form into 1″(ish) balls (I used a cookie scoop and got 20!)
  4. Transfer to a baking sheet lined with foil and sprayed.
  5. Bake 25-30 minutes, until cooked through.
  6. While meatballs are in the oven, make the sauce by combining all ingredients in a pot over medium heat. Once it reaches a boil, turn down to low and simmer for about 20 minutes. Adjust seasonings to taste.

Obviously having Francis around means we MUST have a dessert 🙂  I made these once already this week and he requested them again today.

No Bake Pumpkin Cookies


How to:

  1. Mix everything except coconut in a large microwave safe bowl.
  2. Stir until well combined and nuke for 20 seconds. You can skip this step if you don’t like using the microwave, but it melds the flavors of the sauce.
  3. In the same bowl, add in shredded coconut and mix well.
  4. Scoop 1 tablespoon mounds onto a cookie sheet lined with parchment paper or silicon mat.
  5. Refrigerate for 2 hours to set.
  6. Move to airtight container and store in fridge for up to 5 days

Fantastic Foods

It’s Sunday, so I am trying out a new recipe and give you the down low.  Whenever I try new recipes, Francis gets to be my guinea pig.  So far I have not killed him, but you never know.

I have a wedding coming up in right around 8 months, so both of us have decided we really want to turn our eating around not only to be in the best shape we can be for the big day, but also we just want to feel good.  There are so many different blogs and recipes out there to choose from when making healthy recipes.  A few of my favorites are Paleomg.com, written by the beautiful Juli Bauer, and Taysteofpaleo.com, written by Taylor Nichols.  I use their recipes ALL the time!  They can also give you inspiration to try something different.

Since it is fall and Trader Joe’s has more pumpkin products than the Roloff farm in Oregon, I wanted to make a delish pumpkin treat.  Speaking of Trader Joe’s, a store opened up about4 blocks from my house and it has been amazing!  I walk down a couple times of week and they have so many wonderful and heathy options!  Too bad the only one that sells 2 buck chuck is not close to my house…  Anyway…I used Paleomg.com’s http://paleomg.com/ooey-gooey-chocolate-chip-pumpkin-bars/ as a starting block for my recipe, but put a few of my own twists on it!  First change, I made them into muffins.  Not a big change but they are easier for me to transport.  I did not have tapioca flour, so I subbed arrow root flour in its place.  The biggest change I made was adding bacon to some of the muffins.  Yes I said bacon!  Francis gave them 2 thumbs up and I am pretty sure I will probably not get any if I don’t have one soon!

Recipe for Deeeelish pumpkin muffins


  • ¾ cup pumpkin puree
  • ½ cup coconut oil, melted
  • 1 egg, whisked
  • 1 cup almond flour
  • ¼ cup arrowroot flour
  • 1 cup coconut sugar
  • 1 tablespoon pumpkin pie spice
  • 2 slices cooked bacon
  • 1/2 cup of chocolate chips(I used Enjoy Life Mega Chunks, they are dairy, nut, AND soy free)


-Preheat the oven to 350 degrees

-Mix all of the ingredients, minus the bacon, together in a bowl

-Put cupcake liners in your muffin pan (I have a silicon muffin pan and it is AMAZING)

-Slice bacon and sprinkle them in the bottom of each muffin cup

-Fill each muffin cup about 3/4 full with batter

-Bake for 25 minutes or until a toothpick comes out clean


Now have half a can of pumpkin left…what should I do with it?!

I went wedding dress shopping for the first time this weekend AND we had our engagement photos, I can’t wait to tell you all about it for Wedding Wednesday!

I am so so so excited to go to Chicago next month and absolutely cannot wait to see that gem below 🙂
